You are what you eat, so eat something sweet; like these Organic Grapefruit Macarons.
-2 cups powdered sugar
-1 cup almond meal
-3 large egg whites, room temperature
-1/4 tsp of salt
-1/4 granulated sugar
-2 Drops red food coloring
For Lemon Curd:
-3 egg yolks
-½ cup granulated sugar
-¼ cup pink grapefruit juice from Organic Eco Farms Grapefruit
-1/2 tbs pink grapefruit zest from Organic Eco Farms Grapefruit
-4 tbs cold unsalted butter, cut into chunks
-1 Drop Red food coloring
For Lemon Curd: .
Simmer water in the bottom level of a double boiler. In the top level, combine egg yolks, sugar, organic Eco Farms Grapefruit juice, and zest. Cook over low heat, whisking continuously for 10 minutes – or until thick. Add food coloring. Then remove from heat. Add in the butter one chunk at a time. Allow each piece to melt before adding another. Repeat.
Strain the warm curd through a strainer. Push the curd through the strainer. This will leave a smoother curd and remove any bits of egg. -Wrap in plastic wrap – directly on the surface of the curd. Refrigerate until chilled.
Sift powdered sugar and almond flour together, removing any bits of almond meal left. -In a separate bowl, beat the room temperature egg whites on medium speed until frothy. Add salt and food coloring. Using a rotary beater gradually mix in the sugar until you have stiff peaks. Ideally, use a wire whisk. Do not over mix or the macaroons will be very flat. Fold almond meal & powdered sugar into the egg whites until fully mixed. Use nonstick baking sheets or spray baking sheets with nonstick cooking spray. Now place a cup into a Ziploc bag and cut off a corner. Then squeeze out half dollar sized circles onto the pan. Repeat. Let sit 30 minutes. When the cookies are no longer sticky, place in oven. Bake at 300°F for 15 -20 minutes & enjoy!
