10 Eco Farms Organic Lemons
1 Liter of Skyy Vodka
3 cups sugar
4 cups water
Zest all lemons and place the zest in a large pitcher. Pour in the liter of vodka. Allow the lemon zest to infuse the vodka by covering the pitcher loosely and storing for one week at room temperature.
After a week, combine the sugar and water in a saucepan and bring to a boil, but *do not stir* Boil for 15 minutes and then allow to cool. Stir the mixture into the infused vodka. Strain into mason jars or bottles that can be sealed tightly with corks. Let the mixture age for 2 weeks at room temperature.
Place the jars in the freezer and when ready to serve place 2 tablespoons icy cold liqueur of the mixture in a glass flute and add 1 tablespoon whipped cream (store bought or homemade – directions for homemade below).
Ingredients for Whipped Cream:
2/3 cup heavy whipping cream
2 tablespoons sugar
Directions for Whipped Cream:Beat the heavy cream on high speed until it thickens; slowly add the sugar and continue to beat until it holds stiff peaks. And chill.
