Pink Organic Grapefruit Cupcake Recipe

Make these beautiful pink Grapefruit Cupcakes with Eco Farms Organic Grapefruit! 

2 cups all-purpose flour 
3 teaspoons baking powder 
1/2 teaspoon salt 
3/4 cup unsalted butter 
1 1/3 cups granulated sugar 
4 large eggs 
1 cup reduced-fat Greek yogurt 
1 teaspoon pure vanilla extract 
4 tablespoons pink grapefruit zest from Eco Farms Organic Grapefruit 

1 (8-ounce) block cream cheese, chilled 
4 cups powdered sugar 
1/8 teaspoon pure vanilla extract 
1 teaspoon pink grapefruit zest and 2 teaspoons pink grapefruit juice from Eco Farms Organic Grapefruit 
2 drops red food coloring
Miniature Plant Pots 

Directions: Combine flour, baking powder, and salt. Next, beat butter and sugar with a rotary beater until light and fluffy. Add eggs; mix until smooth. Add half of the flour mixture, and mix. Then add remaining flour mixture and mix. Add yogurt and vanilla and beat in at a low speed. Then, blend in zest.  Scoop dough into baking cups (about 2/ 3 full).

Bake at 350 for about 10 minutes or until a toothpick stuck in the center comes out clean. Let cool.

Then make the frosting: Beat cream cheese with a rotary beater until smooth. Then add sugar, vanilla, grapefruit zest, grapefruit juice and 2 drops of red food coloring. Then beat until smooth. Next to make the beautiful cupcakes above, place them in mini plant pots. Finally, frost the cupcakes and enjoy!
