Avocado Egg Scramble Recipe

Healthy, beautiful & balanced breakfast scramble. Serves: 2; Time: 15 minutes


1 hass avocado halved, pitted and sliced 

One handful cherry tomatoes halved or whole

2 eggs 

3 cremini mushrooms 

One handful arugula 

One handful spinach

3 green onions sliced 

One serrano chile pepper sliced

1 tablespoon butter

Optional: feta cheese

Directions: Heat butter in a non stick pan. Add eggs and veggies to the pan. Simmer for 6-8 minutes. Use a spatula to scramble the eggs. Sprinkle with feta cheese.
